Hi! Happy President's Day! How's your weekend going? We got some more snow yesterday, but luckily much of it was blown away from the high winds last night! For those of you who have today off, what are you up to? Cleaning the house, grocery shopping, and doing laundry are on on the agenda for me. Oh, and I'm meeting a friend for lunch too!
While I'm doing housework, you should go make this granola!
Coconut Almond Butter Granola
2 1/2 cups oats (I used a combination of old-fashioned and steel cut)
3/4 cup shredded, unsweetened coconut (if you use sweetened, you could omit the sweetener if wanted)
1/2 cup almond butter
1/2 cup almonds
1/3 cup coconut oil
1 T sweetener if your choice (I used agave)
Sprinkling of cinnamon
Pinch of salt
Preheat oven to 325*. Line a large, rimmed cookie sheet with foil, or coat with nonstick spray.
In a large bowl, combine oats, coconut, and almonds. Add almond butter and coconut oil to a microwave safe bowl and heat until melted. Pour the mixture over the oats and add the remaining ingredients. Stir to combine. Place the mixture on your prepared cookie sheet. Bake for 30 minutes, stirring every 10 minutes. For the last 10 minutes, you may need to stir more frequently so the granola won't burn.
I've been eating this with some Greek yogurt, fresh fruit, and coconut milk. So good!
