Avocado Hummus

Hi!  The Pats-Titans game just started, so here's a quick post for a yummy football snack.  This hummus has a nice, creamy texture - it's a great marriage of guacamole and hummus.  PS - sorry for the dark photos.  The light was just not cooperating with me yesterday!



Avocado Hummus

2 garlic cloves
1 (15-ounce) can of garbanzo beans (not drained)
1 lemon, zest and juice
2 avocados, sliced
Salt
Olive Oil
1/2 tsp. paprika
Water (if necessary)



1. Add beans, garlic, zest and juice to a blender or food processor.  Blend until smooth (add water if needed to get things moving).  Taste and salt as needed.

2. Add avocados and paprika.  Blend and stream in olive oil until the hummus is the consistency you like.  Taste and salt as needed.

This hummus is great served with veggies and tortilla chips.  I think even some warm pitas would be great too!  I made mine the day before eating and it was still perfectly green.  I'm sure the lemon juice helped to slow the browning.  I bet this would be a great spread for sandwiches (BLT, what?).
