It's that time of year again - St. Patrick's Day and time for
rookie drinking the oh so popular Shamrock shake from McDonald's. I haven't had one in years and I don't plan on having one anytime soon since they are loaded with sugar, calories and preservatives. But, I remember how good they tasted and I am always so tempted to buy one. I think I'll get a small and have just one sip, but I know that isn't possible. So, when I came across a recipe for a healthier version, I felt I'd found a pot of gold at the end of the rainbow hit the jackpot! While this isn't an exact replica, I think it does the trick.
This version contains coconut milk, Greek yogurt and simple syrup made from fresh mint. It's quite refreshing and you don't get that guilty feeling after drinking it. Because this has yogurt in it, it makes a great post workout smoothie. The addition of spinach not only increases the nutritional value but it also helps add to the green color of the smoothie.
