Running Again!

Hi.  How was your weekend?  Mine flew by so quickly and I was able to finally enjoy running again!  After dealing with a fall while running and then strep throat, I finally felt well enough to get outside for a run.  I have been itching to get out for a run since it's been in the 60s and will continue to be warm this coming week.

Over the weekend, I went for a couple of runs to get my legs back in order for a half marathon this weekend.  Boy, are my legs sore today!  I blame it on the mini bootcamp run by my friend Tara and not the three days in a row of running!  :)  I'm hoping to stay on track so I have planned my workouts for the week.  Depending on how my legs feel, I may have to adjust the activities but here is what I have planned:

Monday: Elliptical and upper body weights (but it's 65 degrees right now and I'm tempted to go for a run!)
Tuesday: Run (not sure of distance, but aiming for 3)
Wednesday: Elliptical and core work
Thursday: Interval run on the TM
Friday: Rest
Saturday: Easy run around Fresh Pond with some friends
Sunday: Half marathon

After my workout on Sunday, my friends and I went for breakfast and then it was time to hit up the grocery store.  My fridge was empty and sad - It was almost void of fresh veggies and fruit, but it did have beer (priorities, people)!  So, after a trip to Trader Joe's and Whole Foods (and a lighter wallet!), my fridge went from looking like this:

I feel much better having fresh fruits and veggies now!  Here's a quick list of what I picked up at the store:

It doesn't seem like much but I have plenty to last me more than a week.  I always have meat in the freezer so this week I will defrost some chicken.  I also have the steak marinating now and I hope to grill it with onions tonight for fajitas!

Coconut Macadamia Granola

1 1/2 cups oats
1/2 cup chopped macadamia nuts
1/2 cup unsweetened coconut
3 T. coconut oil
2 T agave or honey
1/2 tsp. vanilla
Pinch of salt
Nonstick spray

Preheat oven to 350.  Spray a cookie sheet (one with sides) with nonstick spray or cover with foil or parchment paper.

Add coconut oil and agave to a microwave safe bowl (I used a glass liquid measuring cup).  Heat until melted, about 1 minute.  Add vanilla.

In a bowl combine oats, nuts, coconut and salt.  Add the coconut oil mixture and combine.  Spread evenly on the prepared cookie sheet and bake for 20 minutes, stirring every five minutes to ensure even cooking.

Cool the granola on the sheet.  If you prefer a clumpy granola, don't touch the granola while it cools.  If you like a less clumpy granola, stir a few times while the granola cools.
