Can't Follow a Plan to Save my Life and Sneaky Vegetables

I don't know why I bother creating a weekly workout plan if I stray from it on day one!  I had planned an elliptical workout followed by weights.  I headed to the gym this morning and put in 30 minutes on the elliptical and decided to run a mile instead of lift weights.  I had an appointment at 1:00 so I wasn't able to get in weights too.  I ended up having a good workout, but I really need to make more of an effort to incorporate weight training.

Before heading to the gym, I had some carrot cake pancakes drizzled with maple syrup and served with fresh fruit.  The pancakes were so good and it was a nice treat when I remembered I had them in the freezer!


After the gym and my meeting, I heated up some refried beans on a whole wheat tortilla.  I topped it with reduced fat cheddar, Greek yogurt and salsa.  It was yummy!  Next time I think I will add spinach to up the nutrition factor.


Speaking of which...  I don't know about you, but sometimes I find it hard to fit in my daily servings of veggies and fruits.  I often get enough fruit (thank goodness for smoothies) but it's not the same with veggies.  That's why I like to "sneak" in foods like spinach or pumpkin when I can.  Since spinach doesn't have a strong flavor, it is a very versatile veggie and easy to add to recipes without changing the flavor.  I love adding spinach to smoothies.  Another favorite way to eat spinach is in an omelet.  It's a great way to add nutrients without adding a lot of calories.

What are ways that you "sneak" fruits and veggies into your food so that you're getting your daily servings?

This afternoon, I headed out to meet my dad to pick up a hutch.  Of course I had to bring a snack with me - A sneaky one at that!  I made a smoothie with chocolate Zico, Greek yogurt, a small banana and a big handful of spinach.  Sneaky, huh?  Luckily I had the smoothie with me because I ended up getting a flat tire on my way home.  Had I been hungry, I am pretty sure I would have been a bit more grumpy than I was!


Since my dad was at my house to drop off my new hutch, he offered to change my tire for me.  We were both pretty hungry, so we headed to my favorite local sandwich place, The Real Deal.  My dad got a really good chicken salad sandwich and I opted for a salad topped with grilled chicken, mandarin oranges, candied walnuts (or were the pecans???) and blue cheese.  It hit the spot!
