Hi there! I hope you're enjoying your weekend. I have had a nice and relaxing one so far. Luckily, I have tomorrow off in honor of President's Day - Woo hoo! It's also school vacation week for some of my teacher friends.
We've been having an unseasonably warm winter which means I've been able to get outside more for runs. Well, I've wanted to get out more for runs but I had a bit of an accident during my attempt at a six mile training run last Sunday. A 1/2 a mile into my run I tripped and fell really hard. I bruised my knee badly (it bruised almost immediately) as well as scraped my Garmin and put a hole in my gloves.
The photo of my knee was taken earlier in the week and it's much worse now. It's a lovely shade of purple with some yellow mixed in. Pretty! I took the whole week off from exercising because it was really sore. I finally hit the gym yesterday and it felt great during my run on the treadmill. This morning I went out for a quick run around Fresh Pond with Alison and it felt pretty good too. I'm not completely out of the woods, but I'm glad I am able to exercise again - I felt uber lazy all week. :(
After our run, Alison and I grabbed a bite to eat before heading to the Wrentham Outlets. Do yourself a favor - Don't go to the outlets during a holiday weekend. It took us forever to find a place to park. Finally, the parking Gods came through for us and we found a great spot right outside the Nike store! I was a good girl and didn't buy a thing - I went to return a few things I'd bought at Nike and it took a lot of self control to not buy more workout clothes! Instead, I hit up Trader Joe's and dropped my life savings stocked up on some necessities. Gummy hearts are a necessity, right? They are yummy in my tummy and I think they would be great fuel on a run! Bonus!
I am pretty sure the Luna and Clif bar aren't brand new, but they are brand new to me! I was a little too excited when I came across the coconut cookies as well as the cinnamon sugar. I can't wait to try them!
So, enough with the randomness... Now onto the recipe! I've never had spaghetti squash before because I live under a rock I've always been worried I wouldn't like it and I'd hate to have to toss it in the trash. I recently came across a recipe for spaghetti squash lasagna and I decided it would be the perfect way to try spaghetti squash. Besides, who doesn't love ooey gooey cheese and sauce? I was sold as soon as I read the recipe!
I will definitely make this again. It was super simple and very tasty - It is a great alternative to conventional lasagna as you still get the flavor of the sauce and cheese, but not all the calories that come with pasta. Spaghetti squash will definitely be added to my veggie rotation and I can't wait to try it in other recipes!

I slightly modified mine by using fresh mozzarella and I put it in one large casserole dish as opposed to individual sized dishes. Note to self: Remember to get out the extra moisture from the mozzarella before using. I found there was some extra water in the dish and I believe this came from the fresh mozzarella.
Try this recipe soon! It's really good and I'm about to go heat up some leftovers for dinner!
