I think you all know by now how much I love pancakes. I'm always thinking of ways to make them healthier. I decided to add oat bran, Greek yogurt and a banana this morning and the outcome was delicious! I didn't have any maple or agave syrup, so I topped mine with a schmear of peanut butter and some strawberries. They were so good and I recommend you make them soon!
Banana Oat Pancakes
1 ripe banana
1 cup buttermilk (I put a teaspoon of white vinegar in a one cup measure and filled up to a cup with skim milk and let sit for about 20 minutes at room temperature)
1/3 cup oat bran
2/3 cup plus 1 tablespoon AP flour
1/4 cup nonfat Greek yogurt
1-2 teaspoons canola, or any light vegetable oil
1 - 2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Nonstick spray
Preheat skillet over medium heat.
Mash banana in a bowl large enough to combine all ingredients. Add buttermilk through salt and whisk together. Let sit for a couple of minutes. Skillet is ready when you splash a bit of water on it and the water dances around. Spray with nonstick spray.
Using 1/3 cup measure, pour batter onto skillet. Cook until bubbles appear. They are ready to flip at this point. Continue to cook for another 1-2 minutes until golden brown. Serve with syrup and or fresh berries.
