Let me just start by saying I am officially addicted to the new Granny Smith Apple flavored seltzer. It's one of the newest flavors (or it may not be new, but it's new to me!) from Polar and I. Love. It. I just picked it up this afternoon and I can't wait to go get more. Buy some. Do it.
The other day I posted about staying on track with exercising. I committed to exercising for at least 30 minutes, five times a week. I started my exercise week on Thursday, and with the exception of one day, I have exercised for at least 30 minutes each day. I worked out for less than 30 minutes on Thursday because I decided to go for a run and the weather was not so cooperative. It was raining and in the 30s. Running in the rain isn't my favorite, and I feel a little more uneasy in the fall when the leaves are all over the ground. I'm worried about slipping on a leaf, hitting my head and being left for dead (dramatic, much?). I have only fallen once while running but I was with a friend. Falling while alone and at night is one of my biggest fears!
So far this week, my work outs have been:
Thursday: 25 minute run
Friday: 35 minute elliptical
Today: 35 minute run
I am running a half marathon in about seven weeks and this weekend is the first official week of my training schedule. I am running a four mile turkey trot tomorrow but really wanted to head out for a run today as well since the weather was perfect for running! I went out for about 3.5 miles and made sure to mix in some hills in preparation for the turkey trot which has its share of hills!
After my run I had a yummy wafflewich - A fried egg, cheddar cheese and some raspberry jam sandwiched between two Van's Lite waffles. I washed it down with some water and an iced coffee. Yum! Recognize the moose glass from somewhere?
This afternoon I visited with my parents before going to get my haircut. Then I hit up Whole Foods for my weekly shopping trip (contain your excitement, people!). It was a treat, though to run into my sister Jen at the WF! She had just finished her workout and was heading to do her grocery shopping as well. She hooked me up with a nonfat latte from Starbucks to help me power through shopping. She's such a good big sis!
For dinner I made a white pizza with garlic, spinach and spicy chicken sausage. It was quick, healthy and delicious! I used a whole wheat Top This frozen pizza crust (found in the freezer section at Whole Foods). I normally make my own pizza dough, but these are great in a pinch.
Recipe:
1 pizza crust
1/3 cup part skim or fat free ricotta
1 cup reduced fat shredded mozzarella
Handful of grated parmesan
1/2 cup of spinach (I used frozen which I defrosted in the microwave and squeezed out the excess water)
1 - 2 spicy chicken sausages, sliced and removed from casing (I used precooked sausage but the raw should cook in the time it takes to cook the pizza. Just make sure the pieces of the meat are small enough)
Garlic powder (you can use fresh too but I didn't have any)
Salt & pepper, to taste
Preheat your oven according to the directions on your pizza shell. Spread a layer of ricotta on the shell and sprinkle half of the mozzarella over the ricotta. Put half of the spinach on the layer of cheeses then add the rest of the mozzarella. Add the sausage and parmesan cheese. Sprinkle with garlic powder and add salt and pepper. Bake for about 10 minutes until the cheese is melted and golden.
